A Canadian Manhattan

1 oz Bourbon
½ oz pure maple syrup
½ oz ice wine

Combine ingredients in a cocktail shaker with ice, shake and pour into an ice filled glass, garnish with a sprig of mint or maraschino cherry.

Ice Wine infused Peach Compote

1/2 cup ice wine (reserve .5 oz)
1 tbsp of white sugar
1 cup vanilla ice cream
2 ripe peaches diced
1 tsp fresh lemon juice
1 dash pure vanilla extract
1 sprig of fresh chopped mint
1 pinch of salt

In a sauce pan on high heat combine the ice wine and sugar and boil for 3-4 minutes, then fold in the remainder of the ingredients. Allow to cool slightly before serving over vanilla ice cream. Also drizzle a ½ oz of ice wine over the dessert.
