Chilled Watermelon Soup


5 cups watermelon cubes (seeded)
½ cup apple juice
2 tbsp fresh lime juice
1 tbsp honey
1 tsp chopped mint
1 tsp chopped basil
½” fresh ginger


Process all ingredients in a blender or food processor. Chill in the fridge for at least an hour before serving, or throw in 3-4 ice cubes while blending if planning to serve immediately.

Tips: add a dollop of yogurt, crème fraiche, chopped mint raspberries or blueberries when serving, or kick it up a notch with a tbsp or 3 of vodka or Malibu!
