1 large egg yolk

½ tsp Dijon mustard

¾ cup vegetable oil

2 tsp fresh lemon juice

¼ tsp salt

¼ tsp white pepper

Whisk together yolk and lemon juice until well incorporated. Then slowly add oil in a thin stream and whisk vigorously until mixture thickens. If the mixture appears to be runny stop adding oil and whisk to emulsify. Finish with salt and pepper and chill.

Get creative with your mayo. Add chopped chives, cayenne, cumin, honey, apple cider vinegar, flavoured mustards, the possibilities are endless.
