Blackened Rainbow Trout Recipe

1 tbsp smoked paprika
2 tsp dry mustard
1 tsp cumin
1 tsp fresh cracked black peppers
1 tsp cayenne
1 tsp dried thyme

4 4oz filets of Rainbow Trout (skinned)
¼ cup unsalted butter (melted)
1 bunch dill


Heat a pan, preferably cast iron or stainless steel, to medium-high. Combine all rub ingredients in a bowl and set aside. Brush each filet with butter and gently coat with dry mixture. Lay down filets in pan and be sure not to crowd. Approximately 2 minutes on the first side and one minute on the other, the fish should look just under charred and should not smell burnt.

Remove from pan and allow to rest, spray with fresh lemon juice and lay on a bed of dill prior to serving
