Strawberry Cone, Lemon Curd, Sweet Coconut

Pack of Ice Cream Cones - 10 pack

Strawberry Cream:
Pint of Strawberries - Washed, Tops removed, cut into quarters
1/2 cup Sugar
1/2 cup Water
1 cup 35% Cream
1/4 cup Icing Sugar
1 tsp Vanilla Paste

Lemon Curd:
3 tbsp Lemon Juice
2 Egg Yolks
3 tbsp Sugar

3 tbsp Dried Sugar Coconut
3 tbsp Sultana Raisins


Strawberry Cream:
In a small pot over medium low heat, add strawberries, sugar and water. Cook for 15-20 minutes or until the strawberries are completely broken down. Remove and blend in a blender until smooth. Add a touch of water if need be to thin out. Remove contents from blender and place in a bowl to cool. In a standup mixer add the cream, icing sugar and vanilla. Attach the whisk attachment and mix on medium speed until stiff peaks have formed. Remove the bowl from the standup mixer and fold in the strawberry compote with a spatula.
Lemon Curd:
In a small pan over medium low heat add the lemon juice, sugar and egg yolks. Using a whisk, whisk the mixture constantly until the mixture lightens in colour and thickens in consistency. When the mixture coats the back of a spoon, remove from heat and place in a bowl to cool.
When everything has cooled, break the top of the ice cream cone. Spoon in the cream mixture, on a plate smear a tbsp of the lemon curd. Lay the cone on top and garnish with dried coconut and sultana raisins.
