Lemon Curd

Lemon Curd

Yield: 1 cup

Cook Time: 15 Minutes


  • 3 Egg Yolks 

  • 1/4 cup Sugar

  • 1 Lemon - Juice, strained 

  • 1 tsp Vanilla

In a medium size pan add egg yolks, lemon juice, sugar and vanilla. Place over medium low heat and stir constantly with a whisk until the mixture is thickened 5-8 minutes. The mixture should resemble a smooth custard. Remove from pan and place in a bowl fitted with fine mesh strainer. Push the mixture through the strainer using a whisk, then cover will plastic wrap and place in fridge to completely cool. Let stand in fridge for at least one hour before using.
