Chocolate Truffles

Delight your guests with this surprisingly simple treat.


One 8-ounce package of cream cheese, softened
3 cups semi-sweet chocolate chips, melted
3 cups confectioners' sugar, sifted
1 1/2 teaspoons pure vanilla extract (you can substitute the vanilla extract w/raspberry, orange or coffee liqueur)

Options for rolling: milk chocolate shavings, sifted cocoa powder, ground walnuts or pecans, grated coconut

Beat cream cheese until smooth in a large bowl. Gradually beat in sugar until well blended. Stir in melted chocolate and vanilla (or liqueur) until no streaks remain. Chill for one hour. Shape into one inch balls and roll in ground nuts, cocoa, chocolate shavings or coconut. Store in parchment-lined candy tins in a cool place.
